sprinkle sugar cookies
makes about 4 dozen mini cookies
ingredients
2 sticks butter, room temp
1 cup granulated sugar
1 cup powdered sugar
1 cup neutral oil (canola or vegetable)
2 eggs
1 tsp vanilla
1 tsp salt
1 tsp baking soda
1 tsp cream of tartar
4 1/4 cups all purpose flour
1/2 cup sprinkles
directions
preheat oven to 325.
cream together butter, both sugars, and oil with a mixer. add in eggs and vanilla and beat until smooth.
in a separate bowl, whisk together all dry ingredients. add the wet mixture to the dry mixture and combine with a spatula. just before it’s all incorporated, add in the sprinkles. mix to combine.
using your hands or a small cookie scoop, place small 2″ balls of dough about 1-2 inches apart on a baking sheet lined with parchment paper. bake cookies for 8 minutes, remove them from the oven and bang the pan 3-4 times on the countertop (no need to be too delicate here π – this flattens the cookies a little bit and gives them those gorgeous cracks on the top. return cookies to the oven for about 4 more minutes, when the bottom edges are starting to brown. take the cookies out and using a small spatula (or ideally, a cake icing spreader) transfer cookies to a cooling rack to cool completely (don’t let them cool on the hot pan or they won’t get as crispy).
